I’ve been saying no to catering but....I got a call and I said yes.
Let’s set this up. This was a five year old Moana party. What a beautiful party I have to insert. The details were perfection. Top left picture gives you an idea.
This is not my specialty so a bit nervous.
Here is what I made -
Sweet and sour meatballs
Tropical sangria
Hawaiian fried rice (vegetarian)
Macaroni salad
Marinated chicken skewers
Trooical salsa
For the kids we did gluten free chicken tenders and peanut butter on Hawaiian rolls
Here are the recipes for the sweet and sour meatballs and macaroni salad
Sweet and Sour Meatballs
Prep 5 minutes

32 ounce bag meatballs your choice
20 ounce can pineapple chunks in juice
16 to 18 ounce bottle BBQ sauce *
14 ounce can whole berry cranberry sauce
optional green onions slices on top
optional serve with kings hawaiian rolls
* just a simple bbq sauce like baby Rae’s original
The how to -
In a deep sauté pan put meatballs, pineapple chunks, bbq sauce and cranberry sauce and heat thru on medium about 15 minutes. Stir occasionally. Turn heat to low and allow sauce to thicken and meatballs become glazed looking. Yummm. Should be smelling great. Maybe another 10 to 15 minutes.
Serve warm. Top with sliced green onions If using. Make a meatball sandwich if using kings rolls. Why would you not?!?
You could also use your crockpot on high for and hour or two.
Such an easy recipe. It’s such a crowd pleaser.
Macaroni Salad
Prep 45 minutes
Cook 15 minutes
Total 60 minutes

2 cups whole milk divided
2 cups Mayo divided (real mayo)
1 Tb brown sugar
1 tsp salt
1/2 tsp pepper
1 lb elbow macaroni
1/4 cup cider vinegar
1/8 cup olive oil
1/3 cup grated yellow onion****
1/2 cup peeled and shredded carrot
1/2 cup celery finely chopped
1/4 cup sliced green onion plus 2Tb for serving
1/4 cup chopped Italian parsley (optional)
*****the grated onion gives it a bit more juicy onion flavor. Trust me!

the how to
- In a small mixing bowl whisk together 1 1/2 cups of the milk, 1 cup of the mayo, brown sugar, salt and pepper and set a side
- In a large pot add 4 quarts of water and cook pasta according to package instructions. Drain pasta and pour back into pot. Pour vinegar and oil over pasta and stir until evenly mixed. Pour pasta in bowl large enough to accommodate remaining ingredients. Cool 10 minutes. Add the mayo mixture stir until even and cool completely.
- Add onions, carrots, celery, green onion minus the extra for serving. Add remaining milk and mayo. Mix. Cover and refrigerate at least an hour and up to overnight. Adjust seasoning right before serving if needed. Add parsley if using along with the remaining green onion.
So that’s two from the Moana party. Please try, try, try. You won’t be sorry. Either one of these recipes would be perfect to bring to any potluck, bbq or family function.
