Pride Month Dinner

How about having a dinner for pride month that showcases milestones?   

I have to admit when I see everything surrounding pride month I really just think about rainbow cake and and parties.  Guilty.   

I feel a bit naive.   We all just people.  I really had to educate myself on quite a lot. 

Wanted to make a dinner where each dish represented a milestone.  So the easy thing was picking dishes from certain states with different events.  This was fun.  

Waldorf Salad  

Why a Waldorf Salad? Well, that famous hotel is in New York.  1970 marks the year in New York one year after Stonewall riots happened and community members marched thru the streets and is considered first gay pride parade.  

Boston baked beans and Vermont bread and butter pickles... 

Massachusetts was first state for same sex legal marriage.   

Vermont, you can look up for yourself.  I think you get the picture .   

Going to give you recipe for these delicious pickles- 

Bread and Butter pickles- 

4 cups thinly sliced unpeeled cucumbers

1 cup thinly sliced onions

1/8 cup salt

1 cup cider vinegar  

1 teaspoon celery seed

1 1/4 cup sugar

1 teaspoon ground turmeric  

1 cinnamon stick  

2 green peppers, chopped

Mix cucumbers with onions.  Sprinkle with salt and allow to stand for one 1 hour.  Drain if any liquid.  Put in large kettle and add remaining ingredients.  Bring to boil, lower heat, and simmer for 30 minutes.  Stir occasionally.  At this point you can pour the mixture into sterilized jars and seal and cool. I usually just put in a nice big jar for us since we eat them so darn fast.  Makes almost two cups .  Hope you enjoy!
